Spring Mix Salad With Homemade Vinaigrette

I hope you all had a wonderful new year! It’s been a few days, and I am sorry for my lack of posts. This time of year is always really busy. Anyhow, I am very excited for 2011 and all of the promises it holds. 2010 was a wonderful and challenging year. I learned a lot, lost a lot, and grew a lot. I am truly excited for the possibilities, challenges, and growth that lye ahead.

To start the year on a light note, here is a simple recipe for a tasty salad.

Ingredients:

Salad

-Spring Salad Mix

-Walnuts

-Goat Cheese

-1 Pear

-Breast of Grilled Chicken (optional)

Dressing

-½ Cup Oil

-½ Cup Red Wine or Raspberry Vinegar

-1 Tsp Dijon Mustard

-1 Tbs. Sugar

-½ tsp oregano

-Salt & Pepper (to taste)

Directions: Mix together desired amount of lettuce and mix with walnuts, pears, and goat cheese. Top with grilled chicken, if desired. In small bowl or container whisk the dressing ingredients together and drizzle onto salad. Enjoy!

Out With a Bang

                  {Blazer: Forever 21, Top: H&M, Jeans: Thrifted, Necklace: Forever 21, Boots: Target}

Yesterday I got my hair done by the wonderful JoBeth. I’ve been craving a new style, but didn’t want to completely chop off my hair. I opted for bangs and highlights and love it. I haven’t had real bangs since I was five!

Anyhow, I hope you are having a wonderful week thus far.

Mocha Fudge Pie

Ryan and I had a great Christmas this year! We spent it at his family’s house, and I wanted to bring something along. Enter in this Mocha Fudge Pie {recipe here}. It has a brownie layer, a pudding layer, and a layer of whipped topping. It is also made with instant coffee granules and kahlua, which give it a really yummy coffee taste. I drizzled mine in chocolate (of course!) but it can also be topped with cocoa powder or chocolate curls. Overall, it was pretty good. I think next time I make it I will add in some caramel. Another tip: if you make it, let the pudding cool first before adding on the whipped topping, otherwise the layers may mix together and not set correctly.

I hope you all had a wonderful Christmas! Have a great week!
