The Hubs and I went out on a “day date” Friday. We had lunch and did a little Christmas shopping… It was a much-needed day off.

This past weekend was a nice break, but now it is back to the Monday-Friday grind.

As much as I have big dreams of living in faraway places, Orlando will always hold a special place in my heart. It truly is a beautiful and inspiring city. We are really blessed to live within walking distance to Lake Eola – one of my favorite places in this town. The weather has been very chilly but really beautiful, so we headed out doors for some fresh air.

I have a serious Target problem. The thing is… I go into Target for a very specific item, like, say, a picture frame… But as I make my way around the store I eye the clothing and shoe section, and before I know it I’m cashing out with a multitude of various items not on my list. Sigh.

On an unrelated note, I love red lipstick. It’s feminine, glamorous, and chic. It can be hard to find the right shade for your skin tone, but once you do, it’s magic. The one I’m wearing is Covergirl’s Classic Red, which is very affordable and can be found just about anywhere.

Mmm...Sweet Potato Soup


I pretty much love sweet potato anything – but this soup is one of my favorites. I also love the fact that sweet potatoes are extremely good for you and are budget friendly. This soup is great as a first dish or can be served with salad and breadsticks for a complete meal. See below for the instructions.

What You’ll Need:

-2 Medium Sized Sweet Potatoes

-1 Medium Onion

-4 Cups Vegetable Broth

-¾ cup Half and Half

-Salt & Pepper

-Lemon Juice

-Nutmeg

Directions:

Peel and dice the sweet potatoes and onion. Combine vegetable broth, sweet potatoes, and onion in large pot and bring to boil. Then reduce heat, cover, and let cook for 25-30 minutes. Then blend in a blender (slowly, in batches) and transfer back to pot. Stir in half and half. Add salt, pepper, lemon juice, and nutmeg to taste. Serve and enjoy!
